👏Crafting Culinary Excellence: My Journey with Dream Group, Dogus Holdings in Istanbul 🇹🇷🍽️🌟

In the bustling heart of Istanbul, amidst the vibrant streets of the Besiktas area, a dream was born. A dream of bringing the rich flavors and vibrant culture of Spanish cuisine to the shores of the Bosphorus. This dream found its roots in a chance encounter over a sumptuous lunch at Barrafina, a renowned Spanish fine dining tapas restaurant nestled in the heart of London, where I, as the head chef, had the pleasure of welcoming esteemed guests from Dream Group, Dogus Holdings.



A Serendipitous Encounter 🍴😊

It was the year 2017, a time when my culinary journey took an unexpected turn, catapulting me from the familiar confines of Barrafina's kitchen to the enchanting streets of Istanbul. Little did I know that a simple lunch would pave the way for an exhilarating consulting project that would redefine my understanding of gastronomy and culture.


As the savory aromas and flavors of Spanish tapas danced on their palates, the representatives from Dream Group found themselves enchanted by the culinary magic unfolding before them. Impressed by the authenticity and finesse of our dishes in Barrafina, they extended an invitation for me to journey to Istanbul for a tasting, igniting the spark that would set the wheels in motion for a remarkable collaboration.


The Role of a Consultant 👨‍🍳📝

My role as a consultant for Dream Group, Dogus Holding, was multi-faceted, encompassing every aspect of bringing a slice of Spanish culinary excellence to the heart of Istanbul. Charged with the task of creating an authentic Spanish tapas menu, I embarked on a journey of exploration and innovation, drawing inspiration from traditional recipes while infusing them with a touch of contemporary flair.


From crafting mouthwatering recipes to developing Standard Operating Procedures (SOPs), my days were consumed with the intricacies of culinary craftsmanship. Each dish was meticulously curated to evoke the essence of Spanish cuisine, from the robust flavors of patatas bravas to the delicate nuances of gambas al ajillo.

Designing Culinary Spaces 🏗️🍳

But my involvement didn't end with the creation of the menu; it extended to the very heart of the kitchen itself. Collaborating with designers and craftsmen, we meticulously planned every aspect of the kitchen layout, ensuring optimal functionality and efficiency. From selecting the finest kitchen equipment to fine-tuning the smallest details, no stone was left unturned in our quest for culinary perfection.


The Dream Team 👩‍🍳👨‍🍳👩‍🍳

As the opening day drew near, I brought with me a team of seasoned chefs from London, each a master of their craft, to join me in bringing the dream to life. For six months, we immersed ourselves in the bustling energy of Istanbul, working tirelessly to prepare for the grand unveiling of La Vina restaurant at Zorlu Center.


Cultural Immersion and Collaboration 🌍🤝

The journey was not without its challenges, as we navigated the intricacies of a new culture and culinary landscape. Yet, with passion and dedication as our guiding lights, we overcame every obstacle that stood in our way.


Recognition and Accolades 🏆👏

The fruits of our labor were soon recognized by Time Out magazine, which bestowed upon us the honor of being nominated for the Best Restaurant and Best Chef awards in 2018. It was a testament to the tireless efforts of every individual involved in bringing the vision of La Vina to fruition.


As I look back on those whirlwind months spent in Istanbul, I am filled with gratitude for the opportunity to be part of something truly extraordinary. Our journey from London to Istanbul was not just about bringing Spanish cuisine to new shores; it was about bridging cultures, forging connections, and creating unforgettable experiences for all who walked through the doors of La Vina.


In the tapestry of life, it is the unexpected twists and turns that often lead to the most enriching adventures. My time with Dream Group, Dogus Holdings, was a testament to the transformative power of collaboration, creativity, and culinary passion.
