🌟 As a consultant with a passion for culinary innovation, I had the privilege of embarking on an exciting project in February 2022 with Maison Estelle, a prestigious private members club nestled in the heart of Mayfair. Ennismore, the visionary CEO and founder, entrusted me with the task of revitalizing Maison Estelle's culinary offerings, following the success of my previous consultancy venture with Seabird, a renowned seafood restaurant in London under the Hoxton Hotel brand.
🍽 My Role as a Consultant:
Collaborating closely with Maison Estelle's management team inlcuding the CEO, GM and operations director, to understand their vision, values, and the unique palate preferences of their discerning members.
Crafting an authentic Spanish tapas menu that would not only tantalize taste buds but also resonate with the club's sophisticated ambiance.
Implementing recipe costings and staff training programs to ensure seamless execution of the new culinary direction.#
📝 My Duties:
Conducting in-depth research into Spanish culinary traditions, flavors, and techniques to infuse an unmistakable authenticity into every dish.
Designing an eclectic menu featuring a diverse array of tapas, from classic favorites like patatas bravas to innovative creations inspired by regional Spanish cuisines.
Developing detailed recipes that strike the perfect balance between tradition and innovation, elevating the dining experience for Maison Estelle's esteemed members.
Working closely with suppliers to source high-quality ingredients that would elevate the flavors and presentation of each dish.
Collaborating with the kitchen team to streamline operations and optimize efficiency without compromising on quality or authenticity.

Over the course of the project, I organized three exclusive tastings for Ennismore, the GM, and the operations director, each meticulously curated to showcase the breadth and depth of our new menu offerings.
These tastings were not only an opportunity to present our culinary creations but also a forum for open dialogue, constructive feedback, and refinement based on the preferences of Maison Estelle's key stakeholders.
